Recipe of the Month: Texas Pecan Puff Christmas Cookies

The holidays can be a challenging time to find creative ways to stay healthy while partaking in seasonal traditions. Luckily, there are ways to even turn the classic Christmas cookie into a healthy alternative. 

This recipe for Texas Pecan Puffs makes shortbread cookies that are low in sugar and are great paired with coffee and hot cocoa. They can also be made gluten and dairy free!

Serves: 4 dozen cookies

Ingredients:

1 cup butter (to make dairy-free, coconut oil is delicious)

¼ teaspoon salt

½ cup sifted powdered sugar

2 cups Texas pecans

2 teaspoons vanilla

2 cups sifted flour (this can be made with gluten-free flour)

¾ cup powdered sugar to roll in

Directions:

  1. Preheat oven to 350 F. 
  2. Put butter in a bowl and gradually add sugar to the butter until creamy. Add vanilla, salt, flour and pecans.
  3. Chill the dough until it’s easy to handle. 
  4. Form the dough into balls that are about the size of marbles (about 1 teaspoon). Put balls of dough onto a nonstick cookie sheet.
  5. Bake cookies for 12 to 15 minutes at 350 F. Let stand for 1 minute and then roll in powdered sugar.
  6. Enjoy!
