Fall Drink Favorites

As colder temperatures fall upon us, we find ourselves with a familiar craving for seasonal signature drinks. Try these three healthy versions that’ll hit the spot!

Pumpkin Spice Coffee Creamer

Ingredients 

1 (13 ½ ounce) can full-fat coconut milk
2 tablespoons water
2 pitted Medjool dates
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
½ teaspoon ground cinnamon
½ teaspoon ginger powder
½ teaspoon ground cloves

Preparation

In a blender, puree until completely smooth then add to hot or cold brew. Use two to three ounces of the creamer per cup of coffee.

Cider-Pumpkin-Pomegranate Smoothie

Servings: 2 to 3 / Active time: 10 minutes / Total time: 10 minutes

Ingredients

1 3/4 cups chilled apple cider 
3/4 cup chilled pomegranate juice 
1 cup plain non­fat yogurt or vanilla yogurt 
1 cup canned pumpkin (not pie mix) 
2 Safest Choice™ pasteurized egg(s) 
1 teaspoon pumpkin pie spice 
1 medium­ size apple (unpeeled, core removed), optional* 
Whipped cream (optional)
Notes: Use Gala, Fuji, Golden Delicious, or other favorite apple.

Preparation

Place all ingredients except whipped cream in blender container; blend until smooth. Serve immediately, topped with whipped cream, if desired.

Hot Cocoa

Ingredients

½ cup of full fat coconut milk
½ cup of unsweetened almond milk
2 ½ tablespoons of unsweetened cocoa powder
½ teaspoon of honey (or to taste!)
