November is our food issue, and we want to feature YOUR healthy recipes on our site. Choose from one of our following categories, or submit one for all three!
To send us your submission, email ReaderRecipes@austinfitmagazine.com no later than October 21, 2013. Please put “Reader Recipe Submission” in the subject line and include your contact info (name, email, preferred phone number) in the message body. Recipes should be attached in a Word document; be sure to title your recipe and note to which of the aforementioned categories it belongs. Please send separate submissions for each recipe (limit three).
We’ll be selecting the best recipes to run as web exclusive content throughout the month of November. We’re looking forward to reading (and tasting!) your submissions. And, to give you a little bit of inspiration, I’m including a favorite healthy remix of my own. This salad is quick and easy to throw together and makes for a nice lunch or afternoon snack.
Court’s Chickpea and Quinoa Salad
(inspired by “Perfect Dolmadas” from Radiant Health, Inner Wealth, one of my favorite cookbooks!)
1 can chickpeas
1 large tomato, chopped
1/4 cup chopped yellow onion
Juice of lemon (about 1/4 cup)
1-1/2 teaspoons dried dill
2 tablespoons minced parsley
1 cup cooked quinoa
Salt to taste
Toss all ingredients in a large bowl and chill. Feel free to add more lemon juice, if desired. Serve over mixed greens and with a slice of crusty, whole-wheat bread.
