1/2 lb Grilled Chicken Breast, diced in 1-inch cubes
1 cup Seedless Watermelon, diced medium
1/2 cup Plum, diced medium
1/4 cup Pumpkin Seeds, roasted
1/2 cup Walnut, chopped & roasted
1/3 cup Red Onion, minced
1/3 cup Celery, minced
1/3 cup Beets, shredded
1/2 cup Fresh Basil, thinly sliced
1/4 cup Mayo
3/4 cup Vanilla Greek Yogurt
1-2 Tbsp Creole Seasoning, to taste
1. Combine all ingredients in a mixing bowl except for the mayo, yogurt & seasoning, and toss until it's mixed fairly well.
2. In a separate container, combine the remaining ingredients, then fold into the chicken mixture.
3. Refrigerate for at least 30 minutes and enjoy.
