Alligator Sausage and Bourbon Chili Pepper Glaze

Alligator Sausage

1 lb ground alligator 
1 lb ground pork
1/4 cup yellow onions, diced
1/4 cup green bell peppers, 
      diced
1/4 cup celery, diced
1/4 cup garlic, minced
1/4 cup green onion, sliced
1/4 cup oregano, chopped
Salt and pepper

1. Mix everything together in a mixing bowl and season with the salt and pepper. 

2. Using a home style meat grinder, stuff the sausage into pork casing, twisting the link in opposing directions every 8 inches. Alternatively, make patties out of the meat mixture if a grinder is unavailable. 

Pro Tip: While seasoning the mixture, pull a small bite away to cook it and test for taste. 


Chili Bourbon Glaze

1/2 cup pineapple juice
1/4 cup crushed pineapple
1/4 cup Worcestershire sauce
1/3 cup teriyaki sauce
1 cup dark brown sugar
1 Tbsp onion, minced
1 Tbsp garlic, minced 
1 Tbsp lemon juice
1 Tbsp bourbon
1 tsp crushed red pepper

1. Combine all ingredients in a blender. 

2. In a saucepan on medium heat, simmer the glaze until it reduces by a third and thickens slightly.
