The Perfect Breakfast On The Go!

From the time my alarm goes off to the time I have to be TV ready, I have two hours to wake up, shower, drive to work, have breakfast, do my hair and makeup, and get dressed. That's not a lot of time.

So, finding an easy and healthy breakfast has been a learning process. By the time you wake up, I've probably already eaten…twice.

My blender has worked magic for us in the kitchen. Below is one of my favorite smoothie recipes. It tastes great and helps me get my day started on the right foot.

Erica's Morning Smoothie

 

1 banana
1/2 cup blueberries (or fruit of choice)
1 scoop vegan protein powder
1 scoop veggie powder (optional)
Half an avocado OR MCT oil (for some healthy fats)
1/2 to 1 cup coconut water 

Blend ingredients and serve!

I like to have healthy snacks on hand at work so I can maintain my energy during busy mornings. Some of my favorites are a piece of fruit, nuts, Greek yogurt, or a LÄRABAR.
