Lavender
Lemon Slice Cookies
Lavender is a taste sensation you may not have experienced
before. Be careful! These cookies can be quite addictive.
Ingredients
1 cup butter
1 cup sugar
2 eggs
2 1/2 teaspoons fresh lemon juice
Zest of 1 lemon
1 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon culinary lavender buds
1 1/2 cups whole wheat flour
1 1/2 cups unbleached enriched flour
Yellow sprinkling sugar
Directions
Cream butter and sugar at medium speed using an electric mixer.
Add egg, lemon juice and lemon zest. Mix thoroughly.
Process lavender buds in a spice mill or food processor until
finely ground.
Stir together salt, baking soda, lavender and flour. Gradually
add flour to the butter and sugar mixture stirring on low
speed until well-blended.
Divide dough into three equal parts. Shape each part into
a roll about two inches in diameter. Wrap rolls in waxed paper
and chill for several hours. After the rolls are chilled,
roll them in yellow sprinkling sugar. Put the rolls back in
the refrigerator until you are ready to slice for baking.
Cut slices 1/4-inch thick, then cut each slice in half to
make a half-moon shape.
Place slices one inch apart on an un-greased baking sheet.
Bake at 400° F for eight to 10 minutes or until lightly
brown. Immediately remove them from the baking sheet and cool
on a wire rack. Repeat with the second and third rolls.
Cookies may be frozen in an air-tight container to preserve
freshness.

Tiramisu Dip
Ingredients
8 ounces Mascarpone cheese
1 ounce very strong coffee
1 ounce dark rum
1/2 cup powdered sugar
1 cup heavy cream, whipped
1 tablespoon cocoa powder or shaved chocolate
1 package lady finger cookies
Directions
Whip cream in a chilled mixing bowl and set aside. Blend Mascarpone
cheese, coffee, rum and powdered sugar at low speed using
an electric mixer until smooth. Fold whipped cream into the
Mascarpone mixture. Cover and chill until ready to serve.
Just before serving, spoon tiramisu dip into a medium-sized
glass bowl, line the edges of the bowl with lady fingers and
sprinkle with cocoa powder or shaved chocolate. A clear bowl
with steep sides will make the best presentation for this
dessert. Replenish lady fingers as guests remove them from
the bowl.
