Oriental Grilled Chicken With Sesame Dressing and Baby Greens

Ingredients
2 small chicken breast halves (about 4 to 5 ounces each)
1/3 cup oriental marinade
4 cups baby salad greens and/or romaine lettuce torn into
bite-sized pieces
1/2 cup mandarin orange sections
1/4 cup chow mein noodles
2 tablespoons sliced almonds
2 tablespoons toasted sesame seeds
Sesame dressing

Directions
Place chicken breast and oriental marinade in a large Ziploc storage bag and marinate for at least 30 minutes, but no more than two hours. Remove chicken and discard marinade. Grill chicken over hot coals until glaze begins to brown and the meat reaches an internal temperature of 165° F (measured with a meat thermometer). While chicken is grilling, wash and spin dry salad greens. Toss greens with mandarin oranges. Divide salad mixture between two plates and chill until ready to assemble. Top each plate of salad greens with one grilled chicken breast half and sprinkle with chow mein noodles, almonds and sesame seeds. Drizzle with sesame dressing and serve immediately. Serves two.

Oriental Marinade

Ingredients
1/4 cup rice wine vinegar
1/4 cup reduced-sodium soy sauce
1/4 cup triple sec or orange juice
2 tablespoons sesame oil
Juice of one lime
1/4 cup green onion, chopped
3 tablespoons brown sugar (Omit sugar if using triple sec.)
1 tablespoon fresh ginger, finely chopped
1 clove garlic, crushed

Directions
Mix all ingredients well and chill until ready to use. Keeps up to two weeks in the refrigerator. Excellent for fish, beef and pork. Makes about one cup of marinade.

Sesame Dressing

Ingredients
4 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
2 tablespoons sesame oil
6 tablespoons rice wine vinegar
1/3 cup canola oil

Mix well and store in an airtight container in the refrigerator until ready to use. Best if used within two weeks. Makes about one cup of dressing.

Each 2 tablespoon serving contains:

Variations
For convenience you may use a prepared marinade. For testing purposes I used House of Tsang Mandarin Orange Marinade. I also have tried Cardini’s Roasted Asian Sesame Dressing (120 calories per 2 tablespoons) and Saytay Sesame Dressing (25 calories per two tablespoons). You also may substitute pork tenderloin, salmon or beef tenderloin in this recipe.
