Low-carbohydrate diets are all the rage these days. In keeping
with popular demand, these recipes fit easily into any low-
or reduced-carbohydrate meal plan. It’s important to
remember any meal plan that contains fewer that 40 percent
of calories from carbohydrates (that would be 200 grams in
a 2000 calorie plan) can be considered a low-carbohydrate
diet.
Colby Crisps
Ingredients
1 cup grated colby jack cheese 1/4 cup finely chopped almonds,
walnuts or pistachios Freshly ground black pepper or red chili
powder Toasted sesame seeds or sunflower seeds
Directions
Preheat oven to 375° F. Spray a baking sheet with nonstick
cooking spray. Arrange grated cheese by tablespoon into 16
even mounds on the baking sheet. Sprinkle each mound with
a variety of toppings as desired. For example, top some with
black pepper and sesame seeds; top others with nuts; sprinkle
a few with a dash of chili powder. Bake eight to nine minutes
until golden and bubbling. For best flavor, serve warm.
Each crisp contains: 26 calories 2 grams of fat (1.5 saturated
fat) 2 grams of protein 0 carbohydrate
Postre de Chocolate y Canela (Mexican Pudding)
Ingredients
3 tablespoons cocoa 3/4 cup Splenda brand sugar substitute
3 tablespoons plus 1 teaspoon cornstarch 1/2 teaspoon cinnamon
1/8 teaspoon salt 1 tablespoon canola oil 2 3/4 cups skim
milk 1 1/4 teaspoon vanilla extract
Directions
Combine dry ingredients in a medium saucepan. Gradually add
milk and oil, stirring until well-blended. Cook over medium-high
heat until the mixture just comes to a boil. Reduce heat to
medium and cook one or two minutes longer, stirring constantly
until the mixture thickens. Remove from heat, stir in vanilla
and spoon evenly into six individual dessert dishes. Serve
warm or chilled.
Each serving contains: 80 calories 4 grams protein 2.5 grams
fat 11 grams carbohydrate
