Rethinking the Potato

If you feel guilty with each bite of mashed potatoes you take, if you've ever found yourself wishing whole wheat potatoes existed or if you simply avoid the starchy non-vegetable altogether, you might want to think again.

We've shunned potatoes ever since the low-carb diet boom, but should learn to embrace the vitamin, potassium and fiber rich root. While it's not a vegetable and shouldn't be factored into your 5-7 servings a day, the potato is a very nutritious starch.

--just 160 calories
--4 grams of fiber
--over 25% of daily vitamin C and potassium
--a plethora of B-vitamins, including folate
--10% of daily iron recommendation.
